Pisco Sour Cocktail
This cocktail is claimed as the national drink both by Peru and by Chile. The egg white is more typical of the Peruvian version of the cocktail.

Preparation

Shake pisco, lemon juice, simple syrup and egg white vigorously without ice. Then strain and shake again with ice. Pour into glass and garnish with a dash of the bitters.

The Chilean version omits the egg white and bitters. Variations substitute other fruit juice, such as pineapple or mango, or even cola.
