In a tall glass filled with ice add the peach nectar and lemon juice, then top with ginger beer. Stir gently to combine. Top with a scoop of creamy vanilla ice cream and sprinkle some ginger snap cookie crumbles on top. Finish with a whole ginger snap pressed into the ice cream.
