Coffee Cake

Ingredients

  • 1 1/2 sticks of butter softened
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1 tsp. vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg lightly beaten

Crumb Topping

  • 3/4 cups All-purpose flour
  • 1/4 cup dark brown sugar
  • 2 tsp. cinnamon
  • 1 stick of cold butter, diced

Preparation

Heat oven to 350°F. Grease an 8x8 pan and set aside.

Start by making the crumb topping first. Mix flour, brown sugar and cinnamon together in a small bowl. Add diced butter and mix by hand until mixture becomes crumbly. Chill in the refrigerator until ready to use.

To make the cake, cream butter and sugar in a large bowl with an electric mixer on medium speed for 2-3 minutes. Scrape bowl and add sour cream and vanilla extract and mix. In a separate bowl, mix together flour, baking soda, baking powder and salt. Add flour mixture to butter mixture and mix until just blended. Add egg and mix again until just blended. Spread into a greased 8x8 pan. The mixture will be thick. Add crumb topping evenly over batter and bake for 40-45 minutes or until a toothpick comes out clean. To make the glaze mix the powdered sugar, vanilla extract, Jameson and salt together in a small bowl until smooth. Pour glaze over the cake while it is still warm.
