Heat oven to 375 degrees. Line a large, rimmed baking sheet with aluminum foil. (If you have a baking rack, place it on the foil lined baking sheet)
In a bowl, mix together brown sugar, maple syrup, bourbon, black pepper and cayenne pepper
Dip each bacon slice in the mixture and place them on the lined baking sheet. If you have any of the glaze left over, spoon it over top of the bacon before putting it in the oven.
Bake for 30-40 minutes or until crispy. (Check them at 30 minutes to see if they are done)
Transfer bacon to a cooling rack until completely cooled, about 15-20 minutes.
