Mt. Defiance double distills their rum in small batches using a copper pot still. The rum is aged for one year in small used rye whiskey barrels, and a touch of caramelized sugar is added before bottling. Mt. Defiance Dark Rum has a vanilla and oak nose, caramel, chocolate and roasted almond on the palate, with a light note of toasted marshmallow on the finish.
