Combine tequila, lime juice and simple syrup in a shaker and shake well with ice. Strain into an ice filled tall glass and top with ginger beer. Stir and garnish with a lime wedge to serve.
Variation: For a spicier Mexican Mule, add 1/2 ounce chile liqueur to the tequila, lime juice and simple syrup before topping with ginger beer. ¡Muy caliente!
